menu for the week

Week 2, ready set go!

Monday: Cider Glazed Chicken w/ Brown Butter Rice + Peas
{had too many leftovers and didn't end up making this last week!}

Tuesday: Marinated Flat Iron Steak w/ Roast Potatoes & Butternut Squash (adapting)
{again, didn't end up making this last week!}

Wednesday: Crock Pot Roast Chicken w/ Acorn Squash & Spinach Orzo

Thursday: Girls Night! I'm busting out my shiny new un-cooked with Pioneer Woman cookbook & making Penne alla Betsy (looks like pure decadence) to be served with a big green salad

Friday: Chicken Enchiladas + a green salad (made with the leftover roast chicken)

Nom, Nom, Noms from last week:

+ cooking light's chicken & dumplings. very yummy! took A LONG TIME to make, very glad I did it on sunday. badger said "double the dumplings!"

{i almost forgot to photograph so please excuse the leftover at work shot. lots of veggies. very yum!}

+tomato & sausage risotto ... again, thumbs up! even though it was sticky risotto the next day, I enjoyed it for lunch!
{working on the food photography ... getting better!}


+pan sauteed trout with capers, orzo, & brussle sprouts very yummy, quick, & light{i think i need better lighting}

+paella for our parents. thumbs up from all six of us from around my tiny table. i even made homemade bread to go along!

I totally printed off that Cidar Glazed Chicken recipe a few days ago, and want to try it next week. Can't wait to hear how it turned out for you. The tomato & sausage risotto also looks yummy.
