Chocolate Chip Cookies + A Winner


I had a happy accident last night whilst making dessert for the meal I'm taking to a friend who just had a baby. Since there is a toddler already in the house I wanted to make some happy kid food in addition to the "clean meal" I make for new-mamas. Insert chocolate chip cookies & pioneer woman's mac & cheese. I changed up a few of the quantities & ingredients of my usual chip cookie recipe and BANG, "The Best Chocolate Chip Cookie Ever," as deemed by my husband, was born. They are just the right combo of crisp on the outside and soft on the inside and their flavor is just the ticket. 

1/2 Cup unsalted butter, softened
1 Cup light brown sugar
3 Tablespoons granulated white sugar
1 egg, room temperature (this is important!!)
2 teaspoons high quality vanilla extract
1 Tablespoon brewed coffee (I use my ice coffee concentrate, but feel free to set aside a little from your morning pot)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1 3/4 Cups all purpose flour
8 oz of dark chocolate chunks ( I like the 365 brand from whole foods with a higher cacao % )

1. Preheat oven to 375.
2. Cream butter & sugars until fluffy.
3. Beat in the egg, vanilla, & coffee.
4. Combine dry ingredients and then slowly add into wet mixture until combined & smooth.
5. Stir in chocolate chunks.
6. Drop or form into small balls and place on cookie sheet. Greased if you don't have a silpat!
7. Bake for 10-12 minutes depending on how crisp you like them


Your mouth will thank me.

Those cookies look delsh! I will have to add that recipe to my fall list when my little guy is a bit bigger and I have more time and energy :)
