I heart heirlooms ...

... tomatoes that is. (and other ones too!) After a weekend trip to the local farmer's market I decided to be a little kitchen creative. The result: amazing.


To cook for 2 people (with leftovers) start with a sampling of 3-4 medium sized tomatoes. Boil a pot of water and par-boil them for just about 30 seconds. Peel the tomatoes chop into small pieces.
In a saucepan, heat olive oil & saute a medium sweet onion. When the onions start to turn translucent, add a couple cloves of fresh chopped garlic. Saute for a minute or so until fragrant. Add the chopped tomatoes and a couple of drops of your favorite hot sauce. I found the one below and think it is amazing. Cook sauce until desired consistency.

"Bayou Passion Louisiana Pepper Sauce for Lovers ... of butter and garlic!"


Add fresh chopped basil towards the end.

Meanwhile boil a pot of water and cook pasta of your choice al dente.


I chopped a couple of small fresh mozzarella balls I found at the big big sale at Southern Season and put them on top of the pasta before layering on the sauce.


Top with Parmesan cheese and enjoy!
(Have I mentioned that Parmesan is my cheese of choice? Mmmm)
