Cross one more thing off the list of "things I refuse to eat"

I was a notoriously picky eater as a child. Mac & Cheese was a staple in my diet. As I grew older, I started eating more and more. Things flew off the list of things I didn't eat. Two items have remained on my list into adult-hood: hotdogs and meatloaf.

At supper club last evening out of politeness I tried a small slice of meatloaf. I ate the whole thing and went for seconds. I amazed myself and the badger. What changed my mind? A Paula Deen Recipe of course!

Bacon Cheeseburger Meatloaf:

  • 1 pound ground chuck
  • 10 slices bacon, cooked and crumbled
  • 1 (8-ounce) package sharp Cheddar, grated
  • 2 large eggs, lightly beaten
  • 1/4 cup bread crumbs, toasted
  • 1/4 cup mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons prepared mustard
  • 1 (3-ounce) can French fried onions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

My guess why I liked it: cheese & french-fried onions. Can't go wrong, well except for the caloric intake of this dish!

I love meatloaf! My friends always tease me because it is such a weird looking dish. This Paula Deen recipe sounds delicious. I'll have to try it asap.

I used to be super picky too. Cheeseburgers, spaghetti and fried chicken. That's it.
Now I'm hard pressed to find things I don't like.
The meatloaf sounds awesome, definitely worth converting to a meatloaf eater!

I used to hate meatloaf too until a friend made one that was to die for! This one looks YUMMY! I mean, anything with bacon is tasty!

I'm the pickiest eater you will ever meet; but I too found that meatloaf was quite tasty during a recent stay at a friend's house. Who knew? :)

I used to hate meatloaf too until about two years ago when I tried my future mother in laws recipe! How funny how our tastes change as we grow!

Meatloaf is such a comfort food and I just love it. This recipe sounds delicious and I have got to try it. I am sure hubby will love it and it seems pretty easy!

OH I just love meatloaf - however the roomie has a great recipe for turkeyloaf. Delicious and better for you. :)

However that Paula Dean recipe looks fantastic!

Oh I have been meaning to ask you - being that I know you enjoy the Food Network - do you watch the Who's going to be the next Food Network Star? It is awesome! I have became completely hooked on it a couple of weeks ago.

I used to hate meatloaf as a kid, but I like it more as an adult. That recipe sounds pretty intense for my supposed healthier eating kick--but it looks pretty delicious!
