Tuesday Topics: Summer Supper

Magnolias & Juleps and I were discussing yesterday a lack of wanting to eat when the heat waves of Summer arrive. We concluded that the lighter (and colder) the better. What are a few of my favorites? Pasta salad, sushi, hummus, and this:
Crock-pot pulled pork BBQ with "badger slaw," corn on the cob (with butter & Jane's crazy mixed up salt), freshly picked green beans with caramelized vidella onions. Best part? Everything fits into the "localvore" movement, fresh from the Farmer's Market!

What you'll need:
  • 4-6 lb Boston butt pork roast (trim the fat)
  • 2 T brown sugar
  • 1 T salt
  • 1/2 tsp. pepper
  • 3/4 C cider vinegar
  • 4 tsp. Worcestershire sauce
  • 1 1/2 tsp. crushed red pepper flakes
  • 1 1/2 tsp. sugar
  • 1/2 tsp dry mustard
  • 1/2 tsp garlic salt
  • 1/4 tsp cayenne pepper
  1. Combine brown sugar, salt, & pepper. Rub over roast.
  2. In a bowl, combine other ingredients. Drizzle 1/2 the vinegar mixture over roast. Refrigerate remaining vinegar mixture.
  3. Cover & cook on low for 10 hours on Low or 6 hours on High in your crock pot.
  4. Pour meat into colander to drain. Remove bones & fat. Shred & stir in 1/2 C ketchup and remaining vinegar. Put back into crock pot on low and serve!
Now you'll say, "barefoot, this is great but it makes so much! whatever will i do with the leftovers?"

I make ceviche. It is so good cold! I also do a 5 bean salad. Yummy.

We also grill out a bit so the oven isn't used. I just recently found a recipe for cold sesame noodles - I may have to try that.

The TSU's egg salad is always a hit, and potato salad is also a favorite! Great recipe Miss Barefoot!

I like to just snack and stick with fruits and veggies, but the Husband needs more calories than that to survive. We normally just end up grilling some thing!

I definitely agree with you...light and cool! And we live in close proximity to Vidalia so the onions are a must have on just about everything! That dinner looks fab-especially the corn on the cob:)

Lychees have the texture of grapes (maybe a little denser) but they taste like a cross between a strawberry and a grape. I can't imagine ever eating them any other way than cracking them open and eating them- but I do know people make deserts out of them a lot...at least in south fla they do. You should get one on the side and taste it! They're good!

Seriously though, kabobs are essential at the Casa de Jeffries on family dinner Sundays when mom and dad are manning the grill.

I haven't been doing a lot of cooking lately for exactly that reason, it's too hot to be near the oven. A salad I keep making is romaine, canned tuna, mozzarella chunks, hearts of palm, dried cranberries, carrots and a honey poppy seed dressing that I make a lot.

Sounds delish! I have been having a lot of smoothies because it is just so so hot. I need to come up with some ideas as well.

Yum! I need a crock pot. I'm a huge fan of salads of any kind in the summer. And veggies from the Farmer's Market, for sure.

I do salads alot..they are so light and you can mix it up however you want!

the mr and I grill alot too!
